Raw Pecan Sandies

Serves: 6 (2 cookies per serving)

Ingredients:

  • 1 1/4 cups (124 g) raw pecans (halves or pieces), plus 12 whole pecan halves for decoration
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 2 Tbsp lucuma powder (optional)
  • 1 tsp vanilla powder or vanilla extract
  • 1 cup (120g) pitted medjool dates (10–12 dates)

 

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep. 
  2. In a food processor fitted with the S blade, place pecans, salt, cinnamon, lucuma (if using) and vanilla and process until everything is roughly broken down.
  3. Add dates. Process the mixture until everything is even and sticks together (about 1–2 minutes). When you squeeze a small amount of the mixture in your hand, you want it to stick together easily.
  4. Shape the mixture into 1-inch balls. Flatten each slightly with the palm of your hand, and then press a pecan half on top. Store the cookies in an airtight container in the refrigerator for up to ten days.
