Sesame-Garlic Soba Noodles with Broccoli, Edamame and Green Onion

Sesame-Garlic Soba Noodles with Broccoli, Edamame and Green Onion serves: 4 (about 1 3/4 cups [420 ml] per serving)

Ingredients:

  • 1 Tbsp salt for boiling noodles (optional)
  • 8 oz (227 g) dry gluten-free soba noodles
  • 3 cups (273 g) chopped broccoli (about 1 large head)
  • 1 cup (118 g) frozen shelled edamame
  • 1/2 cup (120 g) tahini
  • 2 garlic cloves
  • 1/4 cup (60 ml) water
  • 3 Tbsp lime juice (about 3 fresh limes)
  • 2 Tbsp tamari
  • 2 Tbsp maple syrup
  • 1 Tbsp toasted sesame oil
  • 1/2 tsp salt
  • 1/2 tsp five spice powder
  • 3 green onions, thinly sliced (white and light green parts only)

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. Bring a large pot of water to a boil. Add 1 Tbsp salt if desired, and bring to a boil again. Add soba noodles to the pot of boiling water and cook according to package directions. Add broccoli and edamame during the last 3 min of cooking. Drain and set aside.
  3. While soba noodles are cooking, make the sesame-garlic sauce. In the bowl of a food processor fitted with the S blade, place tahini, garlic, water, lime juice, tamari, maple syrup, oil, salt and five spice powder. Process until completely smooth.
  4. In a large bowl, add cooked soba noodles, broccoli, edamame and sesame-garlic sauce. Toss to combine and top with green onions and serve warm, or at room temperature.

Notes:

Storage tip: Sesame-Garlic Soba Noodles will keep in an airtight container in the refrigerator for up to 5 days.
Simplify this recipe: Use frozen broccoli florets in place of fresh.
Reheating tip: Place Sesame-Garlic Soba Noodles in a skillet with 1–2 Tbsp water and reheat over medium heat until warmed through.
Make it soy-free: Replace tamari with coconut aminos. Replace frozen edamame with frozen green peas.
