Sweet Potato Falafel Burgers

Sweet Potato Falafel Burgers serves: 6 servings

The chickpeas in this recipe are softened by soaking in water instead of cooking. Suggested soak time is 8 hours. If it’s going to be longer before you use the chickpeas, drain and replace with fresh water every 8-hours of soaking. 
 
Baking sweet potatoes is a great thing to do during weekend prep so they’re ready for immediate use during the busy week.

Ingredients:

  • 1 Tbsp + 1 tsp olive oil, divided
  • 3 garlic cloves
  • 1 cup (16 g) fresh cilantro leaves
  • 1 cup (16 g) fresh parsley leaves
  • 1 cup (200 g) dry chickpeas, soaked overnight and drained
  • 1/2 cup mashed baked sweet potato (about 1/2 medium sweet potato)
  • 2 Tbsp chickpea flour
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp ground turmeric
  • 1/2 tsp baking powder
  • 1/4 tsp black pepper

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. Preheat oven to 375°F (190°C). Lightly grease a rimmed baking sheet with 1 tsp oil.
  3. In the bowl of a food processor fitted with the S blade, place garlic, cilantro and parsley and pulse until finely chopped. Add drained (uncooked) chickpeas, sweet potato, chickpea flour, remaining 1 Tbsp oil, coriander, cumin, salt, turmeric, baking powder and black pepper. Pulse until all ingredients are finely chopped and completely combined, but not puréed.
  4. Remove chickpea mixture from food processor and form into 6 equal-size patties, about 3-in diameter and 1/2-in thick. Place falafel burgers on prepared baking sheet and bake for 22 minutes, carefully flipping midway through, or until lightly golden on both sides and slightly firm to the touch.
  5. Enjoy immediately.

Notes:

Serving suggestion: Serve on gluten-free buns spread with hummus and topped with kale leaves and hot sauce.
Storage tip: Burgers will keep in an airtight container in the refrigerator for up to 7 days, or tightly wrapped and frozen for up to 3 months.
Reheating tip: Reheat burgers in a 350°F (180°C) oven until warmed through, about 5 minutes.
To cook sweet potatoes from scratch: Place sweet potato on a baking sheet and bake at 400°F (205°C) for 1 hour, or until soft and cooked through.
Make-ahead tip: Falafel burger mixture can be made 1 day in advance and kept in the refrigerator until ready to use.
