Rustic Cranberry Relish

Rustic Cranberry Relish serves: 6
Prep time: 25 minutes | Cook time: 10 minutes | Total time: 15 minutes

Ingredients:

  • 2 cups (200 g) fresh cranberries
  • 1/2 cup (120 ml) water
  • 1 cinnamon stick
  • 1/2 vanilla bean, split
  • 5 dried apricots, minced
  • 2 Tbsp agave
  • Juice of 2 oranges
  • Two 3-inch pieces of orange peel
  • 1/2 red serrano pepper or jalapeño, seeded and minced
  • Black pepper, to taste
  • Salt, to taste

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.

  2.  In a small saucepan on medium heat, add all ingredients.

  3.  Bring to a simmer, then turn down to low and allow to cook for 12–15 minutes, stirring frequently to avoid sticking. The mixture will release natural water at first and then will begin to thicken up to a relish consistency.

  4.  Remove and discard cinnamon stick, vanilla bean and orange peel and chill relish before serving.
