Caesar Dressing

Caesar Dressing serves: 6 servings
Prep time: 10 minutes (plus any additional cashew soaking time*) | Cook time: 0 minutes | Total time: 10 minutes
 

Ingredients:

  • 1/2 cup (60 g) raw cashews, soaked*, drained and rinsed  
  • 2 Tbsp lemon juice (about 1 1/2 fresh lemons)
  • 1 Tbsp Dijon mustard
  • 1 Tbsp tamari
  • 2 Tbsp olive oil
  • 2 garlic cloves
  • 1 Tbsp nutritional yeast 
  • 1 Tbsp balsamic vinegar
  • 1/4 cup (60 ml) water

Instructions:

  1. Read through the recipe and put all ingredients in your work area before starting your prep.
  2. In a high-powered blender, combine all ingredients and blend until completely smooth, scraping down the sides periodically if necessary. 

Notes:

Storage tip: Leftover dressing will keep in the refrigerator for up to 5 days, or can be frozen for up to 2 months.
Nut Soak Note: If you have a high-speed blender, you can skip soaking your cashews. If you don’t have a high-speed blender, you can either soak your cashews in water for 4 hours, or you can do a “quick soak” by covering them with water in a pot and bringing it to a boil. Once the water boils, remove them from the heat and let them sit for an hour.
