Crazy Sexy Kale Salad

Serves:
Prep Time: 10 minutes 

Ingredients:

  • 1 bunch kale, any variety, shredded by hand
  • 1 cup (149 g) chopped red bell peppers 
  • 1/4 cup (30 g) chopped parsley
  • 1 1/2 Hass avocados, pit removed and chopped 
  • 2 Tbsp flax oil
  • 1 1/2 Tbsp lemon juice
  • Sea salt, to taste
  • Pinch of cayenne, or to taste

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. In a medium mixing bowl, combine all ingredients. Massage and mix with your hands to ‘wilt’ the kale and cream the avocado (this should only take a minute or two). Serve solo, with your favorite cooked grain, or wrapped in nori or a gluten-free tortilla. Top your kale with fresh herbs or your choice of diced vegetables, if desired.
