I don’t know about you, but I’ve been snacking my face off during this period at home! These easy gluten-free crackers are satisfying vehicles for dips and spreads. If you can’t get your hands on “everything bagel” seasoning, top with your favorite seeds: caraway, sesame, whatever you like!
Ingredients:
1 Tbsp ground flaxseeds
3 Tbsp water
1 3/4 cups (196 g) almond flour
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp baking powder
1 Tbsp everything bagel seasoning
Instructions:
Read through recipe and put all ingredients in your work area before starting your prep.
Preheat oven to 350°F (180°C).
In a small bowl, whisk together flaxseeds and water to form a “flax egg.” Let sit for 5 minutes, or until slightly thickened.
In a medium bowl, place almond flour, “flax egg,” salt, garlic powder and baking powder. Mix until combined and a dough forms. You may need to form the dough together with your hands, it should be pliable and cohesive.
On a piece of parchment paper, place dough and slightly flatten into a disc. Top with an additional piece of parchment paper and roll out the dough to about 1/8-in (3-mm) thickness. Remove the top piece of parchment paper and, using a pizza wheel or knife, cut dough into 1-in (2.5-cm) squares. Carefully move the cut crackers, along with the bottom piece of parchment paper, to a baking sheet. Sprinkle the tops of the crackers evenly with everything bagel seasoning.
Bake crackers for 15–16 minutes, or until lightly golden brown. Let cool completely before serving.
Notes:
Storage tip: Crackers will keep in an airtight container at room temperature for up to 1 week.
