Hummus Pinwheels

Hummus Pinwheels serves: 4
Prep time: 15 minutes

Ingredients:

  • Four 8-inch whole-wheat tortillas or gluten-free wraps
  • 3/4 cup (180 g) store-bought hummus
  • 1 cup (30 g) baby spinach or chopped butter lettuce
  • 1 cucumber, peeled and thinly sliced
  • 1/4 cup (34 g) sliced kalamata olives
  • 1/2 cup (68 g) thinly sliced roasted red peppers
  • Salt, to taste

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.

  2.  Lay out tortillas. Spread about 3 Tbsp hummus on each tortilla,  leaving about half an inch around all the edges.

  3.  Add spinach, cucumber, olives and roasted red peppers in an even layer across most of the tortilla. Sprinkle with salt.

  4.  Roll and slice in half. For bite-sized snacks, slice each wrap into 8–10 pinwheel pieces and enjoy.
