Pan-Seared Edamame with Garlic

Pan-Seared Edamame with Garlic serves: 4 servings
Prep Time: 10 minutes | Cook Time: 10 minutes | Total Time: 20 minutes

Ingredients:

  • 12 oz (472 g) frozen edamame in pods (about 4 cups)
  • 1 Tbsp coconut oil
  • 1/4 tsp red pepper flakes
  • 1/4 tsp salt 
  • 2 garlic cloves, minced
  • 1 Tbsp rice vinegar
  • 1 tsp tamari

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. Fill a medium pot with water and bring to a boil. Add edamame and cook 2–3 min, or until edamame is bright green and cooked through. Drain.
  3. In a large skillet or wok, heat oil over medium-high heat. Add red pepper flakes, salt and edamame and cook, stirring occasionally, for 3–5 min, or until slightly browned in spots on pods. Lower heat and add garlic, vinegar and tamari. Stir until ingredients are completely combined and garlic is fragrant, about 1 min. 
  4. Place edamame in a serving bowl and enjoy immediately. Season to taste with additional rice vinegar and/or salt, if desired.

Notes:

Storage tip: Edamame will keep in an airtight container in the refrigerator for up to 5 days.
Reheating tip: In a small skillet over medium heat, reheat edamame with 1–2 tsp water.
Make it soy-free: Instead of edamame, use sugar snap peas or green beans. Use coconut aminos instead of tamari.
Make it nightshade-free: Omit red pepper flakes.
