Peanut Butter Chocolate Crispy Treats

Peanut Butter Chocolate Crispy Treats serves: 24 servings

Ingredients:

For the crispy treats:

  • One 12-oz box brown crispy rice cereal 
  • 1 1/4 cups brown rice syrup
  • 3/4 cup smooth peanut butter
  • 2 Tbsp maple syrup
  • 1 Tbsp coconut butter
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt

For the chocolate drizzle:

  • 3/4 cup semisweet nondairy chocolate chips 
  • 1 tsp coconut oil
  • 1/4 tsp flaky sea salt

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. Line a 9-inch x 13-inch baking dish with parchment paper and set aside.
  3. In an extra-large mixing bowl, pour the rice cereal.
  4. In a small saucepan over medium-low heat, place brown rice syrup, peanut butter, maple syrup, coconut butter, vanilla and salt. Whisk until rice syrup and peanut butter liquefy and ingredients are completely combined. Pour warm mixture over the rice cereal and using a wooden spoon or silicone spatula, mix until the rice cereal is completely and evenly coated with the peanut butter mixture. 
  5. Transfer mixture to the prepared baking dish and press evenly into the pan, using the bottom of a measuring cup to help flatten the mixture throughout. Let cool for 1 hour.
  6. While crispy treats are cooling, prepare chocolate drizzle. In a small nonstick saucepan over low heat, place chocolate chips and coconut oil. Whisk constantly until chocolate has completely melted and a pourable sauce has formed. Using a spoon or fork, drizzle chocolate mixture evenly over the top of the cooled crispy treats. Top evenly with flaky sea salt. Let chocolate cool for 15–20 minutes, then cut crispy treats into approximately 24 squares.

Notes:

Storage tip: Crispy treats will keep at room temperature, covered tightly, for 3–5 days.
