Spiced Apple Cider Shrub

Spiced Apple Cider Shrub serves: 4 (3/4 cup or 180 ml per serving)
Prep Time: 5 minutes | Cook Time: 10 minutes | Rest Time: 1 hour | Total Time: 1 hour 15 minutes

Ingredients:

  • 2 1/2 cups (600 ml) apple cider
  • 2/3 cup (160 ml) apple cider vinegar
  • 1/4 cup (60 ml) orange juice
  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cinnamon stick
  • 2 tsp whole cloves
  • 1-in (2 1/2-cm) piece fresh ginger, peeled and thinly sliced
  • Apple slices, optional for garnish

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. In a small pot over medium-high heat, place apple cider, apple cider vinegar, orange juice, maple syrup, vanilla, cinnamon, cloves and ginger. Bring to a boil, then immediately reduce heat to low and gently simmer, stirring occasionally, for about 10 min.
  3. Remove cider mixture from heat and let cool slightly for several min. Strain liquid into a pitcher. Discard/compost solids. Let cool slightly and then transfer to the refrigerator until cool, at least 1 hr.
  4. Fill 4 small glasses with ice and top with cooled cider shrub. Garnish each glass with 1-2 apple slices, if desired, and enjoy immediately.

Notes:

Make-ahead tip: Shrub can be made up to 1 day in advance.
