1-in (2 1/2-cm) piece fresh ginger, peeled and thinly sliced

Instructions:
Read through recipe and put all ingredients in your work area before starting your prep.
In a small pot over medium-high heat, place apple cider, apple cider vinegar, orange juice, maple syrup, vanilla, cinnamon, cloves and ginger. Bring to a boil, then immediately reduce heat to low and gently simmer, stirring occasionally, for about 10 min.
Remove cider mixture from heat and let cool slightly for several min. Strain liquid into a pitcher. Discard/compost solids. Let cool slightly and then transfer to the refrigerator until cool, at least 1 hr.
Fill 4 small glasses with ice and top with cooled cider shrub. Garnish each glass with 1-2 apple slices, if desired, and enjoy immediately.
Notes:
Make-ahead tip: Shrub can be made up to 1 day in advance.
