Spicy Cajun Popcorn

Spicy Cajun Popcorn serves: (3 cups or 720 ml per serving)
Prep Time: 10 minutes | Cook Time: 5 minutes | Total Time: 15 minutes

Ingredients:

  • 1/2 cup (120 g) popcorn kernels
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp cayenne powder
  • 1/4 tsp paprika
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/8 tsp black pepper
  • 1/8 tsp mustard powder
  • 1/4 cup coconut oil, melted

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. In a small bowl, whisk together garlic powder, onion powder, salt, cayenne powder, paprika, oregano, thyme, black pepper and mustard powder to form a Cajun spice blend.
  3. Pop popcorn kernels in an air popper, according to manufacturer’s directions. (See note below for stovetop cooking directions.)
  4. In a large mixing bowl, toss hot popped popcorn with melted coconut oil and Cajun spice blend. Enjoy immediately.

Notes:

To cook popcorn on the stovetop: In a large, heavy bottomed pot with lid, heat 1/4 cup (55 g) coconut oil over medium-high heat until just melted. Add popcorn kernels and place lid on pot. Once the popcorn starts popping, pick up the pot (making sure to keep lid tightly closed)
Storage tip: Popcorn will keep in an airtight container at room temperature for 3–5 days.
Simplify this recipe: Use 1 1/2 Tbsp store-bought Cajun spice blend in place of homemade blend.
Other recipe notes: Smoked paprika may be used in place of sweet paprika, if preferred.
Make it nightshade-free: Omit cayenne powder and paprika. Replace with 1/4 tsp ground cumin and 1/4 tsp ground celery seed.
