Strawberry Kiwi Spring Rolls

Strawberry Kiwi Spring Rolls serves: 4 (2 spring rolls plus 1/4 cup or 60 ml sauce per serving)

Ingredients:

For the Sweet Orange Dipping Sauce:
  • 3/4 cup (180 ml) orange juice
  • 1/3 cup (80 ml) maple syrup
  • 1 1/2 tsp orange zest
  • 1 Tbsp water
  • 1 1/2 tsp tapioca starch
For the spring rolls:
  • 1 cup (166 g) sliced fresh strawberries
  • 4 fresh kiwis, peeled and sliced
  • 1 large green apple, peeled, cored and cut into matchsticks
  • 1 Tbsp lemon juice (about 1/2 fresh lemon)
  • 1/4 cup (23 g) fresh mint (optional)
  • 8 rice paper wrappers (approximately 8-in [20-cm] diameter)

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. To prepare the Sweet Orange Dipping Sauce: In a small saucepan over medium heat, whisk together orange juice, maple syrup and orange zest. In a separate dish, vigorously whisk together water and tapioca starch to form a smooth slurry before adding it to the saucepan as well.
  3. Whisk gently but continuously until bubbles break rapidly on the surface and the liquid has thickened. Turn off the heat, cool to room temperature and chill prior to use.
  4. For the spring rolls: Place prepared strawberries, kiwis and apple in separate bowls. Toss apple pieces with lemon juice to prevent them from browning. Fill a large bowl with warm water.
  5. Dip one rice paper wrapper into the bowl of water, gently rehydrating it for 10–15 sec. You want it to be softened and pliable but not fully tender, as it will quickly become too sticky to work with. Lay the wrapper out on a clean work surface and arrange strawberries and kiwis in a short line down the center. Top with apple pieces and fresh mint leaves, if desired. Fold up the bottom
  6. Repeat until all ingredients are used. Serve with Sweet Orange Dipping Sauce.

Notes:

Storage tip: Leftover Sweet Orange Dipping Sauce can be stored in an airtight container in the refrigerator for up to 10 days. Simplify this recipe: If rice paper wrappers are too fussy to work with or hard to find, you can make more substantial rolls using tortillas instead.
Make-ahead tip: Spring rolls can be made up to 8 hr in advance. Sweet Orange Dipping Sauce can be made up to 10 days in advance.
