Za'atar Sweet Potato Chips

Za'atar Sweet Potato Chips serves: 5 (1/2 cup or 120 ml per serving)

Ingredients:

  • 1 lb (450 g) sweet potatoes (about 3 medium or 1 1/2 large)
  • 1 Tbsp olive oil
  • 1 1/2 Tbsp dried thyme
  • 1 1/2 Tbsp dried oregano
  • 1 Tbsp toasted sesame seeds
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp lemon zest
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. Preheat oven to 300°F (150°C) and line two baking sheets with silicone baking mats or parchment paper. Set aside.
  3. Peel and cut the sweet potatoes into 1–2-mm thick slices, keeping them as consistent as possible. This will allow them to cook more evenly, ensuring crispness throughout.
  4. In a large bowl, combine all remaining ingredients, stirring well. Add sweet potato slices and toss gently, distributing the seasoning and coating the pieces well.
  5. Place sweet potato slices on prepared baking sheets, spreading them out in a single layer without overlapping.
  6. Bake for about 1 hr, rotating the sheets every 15 min, until golden brown and dry to the touch.
  7. Let cool completely before serving or storing.

Notes:

Storage tip: Store in an airtight container for up to 3 days. They may lose crispness over time but will still taste just as good.
Simplify this recipe: Use 5 Tbsp prepared za’atar spice blend instead of all the individual spices and herbs.
Reheating tip: If the chips become softened after storage, they can be somewhat revived with a brief trip through the oven. Lay the chips out in a single layer on a baking sheet and bake at 300°F (150°C) for 10–15 min.
Other recipe notes: Use a dehydrator for a raw preparation. Allow 8–12 hrs at 125°F (50°C) for the sweet potato to properly dry to an optimal, perfectly crisp texture.
