Zucchini Hemp Hummus

Zucchini Hemp Hummus serves: 3 servings (1/2 cup per serving)

Ingredients:

  • 2 cups (304 g) peeled and roughly chopped zucchini
  • 1/2 cup (120 g) tahini
  • 1/4 cup (40 g) hemp seeds
  • 3 Tbsp lemon juice (about 2 fresh lemons)
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • Salt, to taste 
  • Black pepper, to taste

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. In a high-speed blender or food processor, place all ingredients and blend until smooth. If you use a food processor, you'll need to run the motor for a few minutes and stop and start the machine a few times to scrape the bowl down. Serve with crisp raw veggies, such as carrots, celery sticks, broccoli, cherry tomatoes or cucumber slices.

Notes:

Storage tip: Zucchini Hemp Hummus will keep in an airtight container in the refrigerator for up to 3 days.
