Blueberry, Banana and Walnut Oat Bake

Blueberry, Banana and Walnut Oat Bake:

Ingredients:

  • 2 1/2 cups (200 g) dry gluten-free rolled oats
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 2 Tbsp ground flaxseeds
  • 1 cup (155 g) frozen blueberries
  • 2 bananas, divided, chopped
  • 1/2 cup (62 g) walnut halves, chopped
  • 2 3/4 cups (660 g) nondairy milk of choice (almond, hemp, rice, etc.)
  • 1 Tbsp maple syrup (optional)

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.

  2. Lightly grease an 8-inch x 8-inch (20-cm x 20-cm) baking dish and preheat the oven to 350°F (180°C).

  3. In a large mixing bowl, stir together oats, salt, cinnamon, ginger and flaxseeds. Fold in blueberries, 1 banana and walnuts.

  4. In a blender, place nondairy milk, remaining banana and maple syrup (if using) and blend until smooth. Pour the liquid over the dry ingredients and mix well. Transfer the whole mixture to the prepared baking dish.

  5. Bake for 40–45 minutes, or until the top is browning and firm. Allow the oat bake to set for at least 30 minutes. Cut and enjoy!
