Cauliflower Mushroom Breakfast Scramble

Cauliflower Mushroom Breakfast Scramble serves: 4 servings (about 1 1/2 cups or 360 ml per serving)

Kala namak is also known as Himalayan black salt, Sulemani namak, bit lobon, kala noon, or pada loon and is manufactured from the salts mined in the regions surrounding the Himalayas. Due to its high sulphur content, it adds an eggy taste and smell which works nicely in breakfast foods. You can find it at Indian and specialty grocery stores as well as online.

Ingredients:

  • 2 Tbsp olive oil
  • 1 onion, finely chopped
  • 16 oz (450 g) cremini mushrooms, sliced
  • 1 head cauliflower, trimmed and roughly chopped into very small florets (about 5–5 1/2 cups or 535–589 g)
  • 2 tsp nutritional yeast
  • 3/4 tsp salt
  • 1/2 tsp ground turmeric
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 2 Tbsp chopped fresh parsley
  • 1/16 tsp (small pinch) black salt (kala namak), plus more to taste (optional)

Instructions:

  1. Read through the recipe and put all ingredients in your work area before starting your prep.
  2. In a large pan, heat oil over medium-high heat. Add onion and mushrooms and cook, stirring occasionally, for 6 minutes, or until mushrooms are tender and onion is translucent. Add cauliflower, nutritional yeast, salt, turmeric, garlic powder, and black pepper and stir to combine. Cook, stirring occasionally, an additional 9 minutes, or until cauliflower is soft. Add parsley and black salt. Season to taste with additional black salt, to taste, if desired. Enjoy immediately.

Notes:

Storage tip: Scramble will keep in an airtight container in the refrigerator for up to 5 days.
Reheating tip: Scramble can be reheated in a frying pan over medium-low heat with 1 tsp water until heated through.
