Cinnamon-Walnut Banana Bread

Cinnamon-Walnut Banana Bread serves: 8 (makes 1 loaf)

Ingredients:

  • 3 ripe spotty bananas, mashed (about 1 1/3 cups or 299 g)
  • 1/2 cup (122 g) unsweetened applesauce
  • 1/4 cup (60 ml) olive oil
  • 2 Tbsp maple syrup
  • 2 Tbsp ground flaxseeds
  • 1 Tbsp vanilla extract
  • 2 cups (242 g) oat flour
  • 1/4 cup (48 g) coconut sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (93 g) chopped walnuts

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep.
  2. Preheat oven to 350°F (180°C) and spray a 9-in (22-cm) loaf pan with nonstick cooking spray or coat with olive oil.
  3. In a large bowl, place mashed banana, applesauce, oil, maple syrup, flaxseeds and vanilla extract. Stir until combined.
  4. To the same bowl, add oat flour, coconut sugar, cinnamon, baking soda, baking powder and salt. Stir to combine. Fold in walnuts./li>
  5. Pour batter into prepared loaf pan. Bake about 50 min, or until toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely before slicing.

Notes:

Storage tip: Banana bread will keep tightly wrapped in the refrigerator for up to 1 week, or frozen for up to 3 months.
Make it nut-free:Omit walnuts.
