2 sweet potatoes or 3 red potatoes, cut into small cubes (about 3 cups or 399 g)
1/2 yellow bell pepper, finely chopped
1/2 red bell pepper, finely chopped
1 small red onion, finely minced (about 1/2 cup or 80 g)
One 6-oz (170-g) package tempeh bacon strips, finely diced, or one 8-oz (227-g) package smoked tofu
2 tsp smoked paprika
3 Tbsp olive oil
Salt, to taste
Black pepper, to taste
1/4 cup (15 g) chopped fresh parsley
Read through recipe and put all ingredients in your work area before starting your prep.
Preheat oven to 375°F (190°C).
In a bowl, place potatoes, bell pepper, onion, tempeh bacon, paprika and oil. Mix by tossing with hands or two large spoons. Season to taste with salt and black pepper.
Pour the mixture onto a baking sheet. Cook for 15–20 minutes, until potatoes are tender, browned and crispy around the edges.
Remove from oven and sprinkle with parsley.
