Tahini and Avocado Toast

Tahini and Avocado Toast serves: 1 serving

Ingredients:

  • 2 slices whole-grain or gluten-free bread
  • 2 Tbsp tahini
  • 1/4 Hass avocado, sliced
  • 1/2 cucumber, sliced
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. Read through recipe and put all ingredients in your work area before starting your prep. 
  2. Toast the bread.
  3. Spread each slice of bread with 1 tablespoon tahini. Top each with the avocado slices, then the cucumber slices, and sprinkle with salt and black pepper before serving.

Notes:

Alternative to whole-grain or gluten-free bread: Make 2 slices sweet potato toast. Carefully slice a sweet potato lengthwise (peeling optional) in 1/4-inch (6-mm) thick slices. In a regular toaster or toaster oven, toast the slices until they are tender. It may take 3 rounds of toasting. 
Make it nightshade-free: Make sure bread is free of potato starch and consider having sweet potato toast or making your own whole-grain or gluten-free bread if you can’t find a suitable brand.
Sesame-free option: Use sunflower seed butter in place of the tahini.
